I fully agree with your thoughts, but I sense that organizations themselves should ask themselves the question of whether they are capable of defining what they consider as "service". To detect the business relevancy of 5 nines for the uptime of any given machine in most enterprises one would have to use a microscope. Instead, measures like "x invoices need to be printed out on the last day of the month" make it more understandable what a business REALLY requires. Close collaboration between service providers and consumers and maybe consultants is crucial to overcome the "servers vs. service" discussion.
