Put VPOP3 on the network as the first MTA. It is cheap, and BTW English.
Configure it to pass mail on to Exchange so ES can do its magic with the schedules and calenders and so on.
I just use VPOP3 as an MTA on the WIndows side, becuase I don't need the complicated ES stuff, but I can see that others need or want it.
